Star Anise is a native spice of China and is a dominant ingredient in Chinese Five Spice blend.
Star Anise is a irregular star-shaped fruit with eight carpels joined around a central core. Each carpel containing a seed. It is used in following forms: Dried whole, broken pieces or ground. The fruits are picked when green, before they ripen and become sundried.
Star Anise has a licorice-like, sweet and pungent flavour, similar to fennel and anise, but stronger. It can leave a bitter aftertaste if used at high levels.
Star Anise gives a spicy, sweet flavour that becomes more intense as it gets cooked. The seeds have less flavours than the pods and the broken pieces of pods are less aromatic.
It is used in marinades, bbq's, roasts, stews, and soups that require long simmering.
Star Anise pairs well with mint, cinnamon, ginger, soy sauce, orange, rose assence, curry leaves, chilli peppers, curry powders and black pepper.
Therapeutic uses: Asian use star anise to reduce stomach pains and is also used in teas to crue sore throats and coughs.
